I was just wondering what are some of your favorite FO that don't act up or discolor too bad.

Most clear FO's or ones without vanillin in don't discolor. Most spicy or floral ones (except lavender since that's herbal, not floral) tend to act up in CP.
My favorite FO's that don't discolor & behave beautifully in CP are:

Also, Black Raspberry Vanilla from Natures Garden is a big seller, soaps wonderfully & doesn't discolor.

Two that I like are: wasabi and fresh snow. Depending on the season, peppermint may be another one to consider.

I love fresh snow, but it accelerates like mad in my recipes. I have under 3 minutes to get it in the mold before I have soap on a stick. I've tried 5 or 6 different recipes with it and always get the acceleration, and I only use it at 1-2%.

Energy, tropical vacation and black raspberry vanilla (all from Brambleberry) work great for me. No discolouration or acceleration

I got a free sample once called "OMG Olive!". It didn't really smell like olive to me, but it had a fresh clean scent. I used it in a small batch of soap and love it. No discoloration. Sorry, can't remember right now where it was from, but if you are interested you can probably google the name.

Discoloration from fragrances depends on the vanillin content of the fragrance oil and also your recipe. The lighter the oils and butters, the better the chance that the final color of the soap will be lighter. You can also try titanium dioxide or a vanilla stabilizer made for cold process soap.
