Superfatting means there is excess of oils or butters as the lye did not saponify all of it. It makes for a milder and safer soap. The exceptions to this rule would be laundry soap, which is normally done at 0% superfat, so it cleans better. Most people superfat from 5% ot 7%.
The % are easier to work out, so you can make any size recipe. Think of the whole recipe as 100%. If you are making a 100 gm. soap (just an example) and your coconut is at 20%, that means that you would need 20 gms. of coconut. Makes sense?
